macaroni and cheese with poblano peppers

This new macaroni and cheese recipe I created is filled with poblano peppers, like a chile relleno meets mac and cheese. It's a great side with fried chicken and cornbread.

Ingredients

  • 1 pound dry elbow macaroni
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 5 large poblano pepper, seeded and sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 tablespoon creole seasoning
  • 2 teaspoons black pepper
  • 2 tablespoons margarine
  • 3 tablespoons all purpose flour
  • 1 cup heavy cream
  • 1 cup whole milk
  • 8 ounces cream cheese, softened
  • 2 cups cubed process American cheese
  • 1 cup shredded Mexican cheese blend
  • 3/4 cup crushed Flamin' Hot Cheetos

How To Make macaroni and cheese with poblano peppers

  • Step 1
    Preheat oven for 350 degrees F. Coat a 9x13-inch casserole dish with cooking spray.
  • Step 2
    Cook macaroni according to package directions; drain.
  • Step 3
    Pour into the prepared casserole dish. Add lime juice; mix well.
  • Step 4
    Heat olive oil in a large, deep skillet over medium heat. Add sliced poblano peppers and saute for 3 minutes until tender.
  • Step 5
    Season with garlic powder, ground cumin, onion powder, creole seasoning and black pepper and saute for 2 minutes. Remove from heat and set aside.
  • Step 6
    Heat margarine in a medium saucepan over medium heat. Add flour and whisk about 30 seconds.
  • Step 7
    Slowly whisk in heavy cream and milk for 30 seconds more until combined.
  • Step 8
    Mix in cream cheese and cubed American cheese together until melted and creamy.
  • Step 9
    Add sauteed poblano peppers and cooked macaroni; stir well. Remove from heat.
  • Step 10
    Pour into a prepared casserole dish. Sprinkle with the Mexican cheese blend. Bake for 25 minutes or until cheese is melted.
  • Step 11
    Cool for 11 minutes. Garnish with crushed Flamin' Hot Cheetos evenly on top.
