I am not a fan of canned baked beans but my husband is. In fact, he will eat just about anything put in front of him. One day I decided to spice up the store bought ones and the result was delicious. In fact, it is one of my husband's favorite dishes. The next time I make them I will take a photo! Note: you can more or less adjust the ingredients to your liking.
1Cut bacon in half (you will have two half pounds). Pan fry all but six slices until crisp. Remove from pan and drain all but two tablespoons of bacon grease (leave just enough to coat the bottom of the pan).
2Cook chopped onion and green pepper in bacon grease until translucent; about five minutes.
3Meanwhile, put beans in a mixing bowl and crumble bacon; add to beans. Add cooked onion and green pepper and stir to combine all. Stir in brown sugar and mustard; mix well.
4Transfer beans to a 2-quart casserole dish and top with reserved bacon slices. Heat in 350 degree oven until bubbly; about 30 minutes. Remove from oven, let cool slightly, and enjoy.
