Ingredients

  • EGG BREAD:
  • 2 cups corn meal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 3 - eggs
  • 2 cups buttermilk
  • 1-1/2 stick margarine (melted)
  • CHICKEN BROTH:
  • 2-3 pounds small whole fryer chicken
  • 1 stalk celery cut into 4 pieces
  • 1 small onion peeled and quartered
  • 1/2 teaspoon salt
  • DRESSING:
  • 4-1/2 slices toast (cut into 1 inch squares)
  • 1 medium onion (chopped)
  • 1-2 stalk celery (chopped)
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 3 - eggs (beaten)
  • - re heated chicken broth
  • - boiled chicken (optional) (pulled into pieces)

How To Make jesi’s southern dressing

  • Step 1
    Egg Bread:
  • Step 2
    Preheat oven for 350. Mix all ingredients together in a bowl. Pour bowl into a lightly greased baking dish. I use large cast iron skillet. Bake at 350 for 45 minutes to 1 hour until dark brown. Set aside.
  • Step 3
    Chicken broth:
  • Step 4
    Place chicken in stockpot and add water enough to cover. Add celery, onion and salt. Boil until chicken is done and falling of the bone. About 1 1/2 hours. Strain broth and discard celery and onion. Retain chicken. Let broth cool and place in refrigerator allowing the fat to form at the top. Discard the fat.

    Dressing:

    Crumble egg bread in a large mixing bowl. Add broth until moistened. Mix in toast and add broth just to the point the breads can’t hold anymore. Freeze remaining broth for future use. Let cool.
  • Step 7
    Mix in eggs, onion, celery, salt and pepper. Optionally you can add some of the chicken to your mix now.
  • Step 8
    Pour dressing into a greased casserole pan. Bake in a pr heated oven at 350 for 1 -1 ½ hours stirring 2 or 3 times while baking, when the top turns brown. Don’t overcook. Check with spoon for firmness. Serve hot.
