How To Make jesi’s southern dressing
-
1Egg Bread:
-
2Preheat oven for 350. Mix all ingredients together in a bowl. Pour bowl into a lightly greased baking dish. I use large cast iron skillet. Bake at 350 for 45 minutes to 1 hour until dark brown. Set aside.
-
3Chicken broth:
-
4Place chicken in stockpot and add water enough to cover. Add celery, onion and salt. Boil until chicken is done and falling of the bone. About 1 1/2 hours. Strain broth and discard celery and onion. Retain chicken. Let broth cool and place in refrigerator allowing the fat to form at the top. Discard the fat.
-
5Dressing:
-
6Crumble egg bread in a large mixing bowl. Add broth until moistened. Mix in toast and add broth just to the point the breads can’t hold anymore. Freeze remaining broth for future use. Let cool.
-
7Mix in eggs, onion, celery, salt and pepper. Optionally you can add some of the chicken to your mix now.
-
8Pour dressing into a greased casserole pan. Bake in a pr heated oven at 350 for 1 -1 ½ hours stirring 2 or 3 times while baking, when the top turns brown. Don’t overcook. Check with spoon for firmness. Serve hot.
