This crust-less casserole is a great appetizer for a cold day! Also a perfect partner with a pot of pintos.

Ingredients

  • 1-16 oz.
    jar sliced pickled jalapeno peppers, drained. use "tame" jalapenos for those who can't take the heat)!)
  • 1 small can(s)
    green chiles
  • 6-8 medium
    eggs, beaten
  • 2 1/2 cups c
    (-or more!) sharp cheddar cheese, grated

How to Make Jalapeno Pie

Step-by-Step

  1. Heat oven to 375. Spray an 8x8 casserole dish with oil.
  2. Beat eggs. Reserve about 1 cup of cheese for topping. Stir all ingredients together and pour into oiled dish.
  3. bake, uncovered for 20 min. or until center is firm.
