Ingredients
- 1 medium onion, finely chopped
- 2 tablespoons butter
- 8 ounces tomato sauce
- 4 ounces green chiles, chopped
- 1/2 teaspoon salt
- 2 - eggs, slightly beaten
- 1 cup half and half
- 11 ounces corn chips
- 1/2 pound monterey jack cheese, shredded
- 1/2 cup cheddar cheese, shredded
- - paprika
- 1 cup sour cream
How To Make jack jubilee

Step 1Preheat oven to 350 degrees .

Step 2Saute onion in butter until transparent; stir in tomato sauce, chopped peppers and salt.

Step 3Simmer 5 minutes; remove from heat.

Step 4Combine eggs and cream; stir into sauce.

Step 5Place half the corn chips in bottom of a 1 1/2 quart casserole; add in layers, half the monterey jack cheese, half the sauce.

Step 6Repeat; top with sour cream and sprinkle with shredded cheddar cheese and paprika.

Step 7Bake, uncovered, for 30 minutes.
