  • 1 medium
    onion, finely chopped
  • 2 Tbsp
  • 8 oz
    tomato sauce
  • 4 oz
    green chiles, chopped
  • 1/2 tsp
  • 2
    eggs, slightly beaten
  • 1 c
    half and half
  • 11 oz
    corn chips
  • 1/2 lb
    monterey jack cheese, shredded
  • 1/2 c
    cheddar cheese, shredded
  • ·
  • 1 c
    sour cream

How to Make Jack Jubilee


  1. Preheat oven to 350 degrees .
  2. Saute onion in butter until transparent; stir in tomato sauce, chopped peppers and salt.
  3. Simmer 5 minutes; remove from heat.
  4. Combine eggs and cream; stir into sauce.
  5. Place half the corn chips in bottom of a 1 1/2 quart casserole; add in layers, half the monterey jack cheese, half the sauce.
  6. Repeat; top with sour cream and sprinkle with shredded cheddar cheese and paprika.
  7. Bake, uncovered, for 30 minutes.
