What if I combined scalloped potatoes and my famous honey margarine? The result is one delicious side dish, filled with sliced vidalia onion and pepperoni.

Ingredients

  • HONEY MARGARINE
  • 2 1/2 sticks margarine
  • 1 cup honey
  • SCALLOPED POTATOES
  • 1 large vidalia sweet onion, peeled and thinly sliced
  • 1 package mini pepperoni
  • 1 tablespoon sea salt mixed with black pepper
  • 4 tablespoons all purpose flour
  • 1 cup heavy cream
  • 2 cups whole milk
  • 8 ounces cream cheese, softened
  • 3 pounds russet potatoes, thinly sliced
  • 8 ounces extra sharp cheddar cheese, shredded

How To Make honey margarine scalloped potatoes with pepperoni

  • Step 1
    Whisk margarine and honey together in a medium bowl until combined. Set aside.
  • Step 2
    Preheat oven to 350 degrees F.
  • Step 3
    Lightly coat the bottom and sides of a 9x13 inch baking dish with cooking spray.
  • Step 4
    Heat 2 tablespoons honey margarine in a large skillet over medium heat. Add the onion, mini pepperoni and sea salt/black pepper and saute for 5 minutes, or until the onion and pepperoni are tender. Remove from heat and set aside.

    Melt 3 tablespoons honey margarine in a medium saucepan over medium heat. Add flour and whisk to form a roux. Cook for 2 minutes.
  • Step 6
    Slowly add heavy cream, milk and cream cheese, whisking constantly. Bring roux to a simmer and let thicken just slightly, about 2 to 3 minutes after coming to a simmer. Remove from heat and set aside.
  • Step 7
    Layer half of the potatoes, half of sauteed onion/pepperoni mixture, half the shredded cheese and half the sauce in a prepared baking dish. Repeat the layers.
  • Step 8
    Spread remaining honey margarine evenly. Cover the baking dish with foil and bake for 1 hour. Remove the foil and bake an additional 30 minutes or until the potatoes are easily pierced with a fork.
  • Step 9
    Remove from the oven and let cool for 10 minutes before serving.
