hershey broccoli bake, mom's special recipe

This recipe is not chocolate...it instead comes from Hershey Park's Restaurant (in PA). There is, of course,, a story behind this....Mom was a chef quality cook. She could come up with a recipe with just ingredient ideas and make a meal...which didn't help trying to interpret some of her recipes in her binder since she also neglected to name them or give directions often. This time when my parents were vacationing in PA, they were eating at the restaurant and Mom complimented the chef (through the waiter who went to share) on this dish. He took her into the kitchen, and shared his recipe!

Ingredients

  • 1 large bunch broccoli
  • 1/2 pound bacon
  • 2 packages stouffers welsh rarebit
  • 1 can lowrey's french fried onion rings
  • 1 can sliced water chestnuts, drained

How To Make hershey broccoli bake, mom's special recipe

  • Step 1
    Take broccoli and cut away half of the stem area. Cut florets lengthwise to lay flat in the bottom of a dish. Blanche florets till tender and drain until thoroughly dry. Fry bacon until crisp. Cool and break into large chunks. In saucepan, melt rarebit until warm. Open Lowrey's and water chestnuts. Assemble in 9x13 pan in rows. Layer broccoli in pan, topped with half the bacon, water chestnuts and onion rings. Cover with rarebit and top with remaining ingredients. Sprinkle with paprika. Bake uncovered at 350 degrees 35-45 min or until bubbly. Holds well on a buffet for about 45 min.
