1 cgrits, quick-cooking
2 cfrozen white corn, thawed
1 can(s)(4 oz) chopped green chillies
1 cshredded mexican cheese blend
·salt and pepper to taste

How to Make Grits Casserole
- In a large saucepan, bring milk and 1/2 cup butter to a boil. Slowly stir in grits, reduce heat and stir for 5-7 minutes.
- In a small bowl, beat eggs. Stir in a small amount of hot grits into eggs so they won't scramble, then pour it into the pan with the rest of the grits. Melt the 1/3 cup of butter and stir into grits. Add the corn, chillies, cheese, salt and pepper.
- Pour grits mixture into a greased 2 quart baking dish, bake uncovered at 350° for 35-40 minutes or until a knife inserted near the center comes out clean. Sprinkle with more shredded cheese (to your liking) then bake an addition 5 minutes, or until cheese melts.
