My family loves grits. I stumbled across a grits recipe a few years ago, made a few changes and made it for a holiday dinner. They enjoyed it so much I have to make it for more than just holidays. So here it is, hope you enjoy it as well.

Ingredients
- 4 cups milk
- 1/2 cup butter
- 1/3 cup butter
- 1 cup grits, quick-cooking
- 2 - eggs
- 2 cups frozen white corn, thawed
- 1 can (4 oz) chopped green chillies
- 1 cup shredded mexican cheese blend
- - salt and pepper to taste
- - shredded cheese for topping
How To Make grits casserole

Step 1In a large saucepan, bring milk and 1/2 cup butter to a boil. Slowly stir in grits, reduce heat and stir for 5-7 minutes.

Step 2In a small bowl, beat eggs. Stir in a small amount of hot grits into eggs so they won't scramble, then pour it into the pan with the rest of the grits. Melt the 1/3 cup of butter and stir into grits. Add the corn, chillies, cheese, salt and pepper.

Step 3Pour grits mixture into a greased 2 quart baking dish, bake uncovered at 350° for 35-40 minutes or until a knife inserted near the center comes out clean. Sprinkle with more shredded cheese (to your liking) then bake an addition 5 minutes, or until cheese melts.
