Found this one in Ma's recipe file we found in NC in July 2019, with her note that she got it from Bee Randle.

Ingredients
- 2 cups cooked rice
- 1 cup chopped green pepper
- 1 cup chopped parsley
- 1 teaspoon salt
- 2 cups nippy cheddar cheese (barb said this is sharp cheddar)
- 3 eggs, beaten
- 1/2 cup butter or oleo
- 1 cup milk
- 1 teaspoon onion, finely chopped (small onion)
How To Make green rice, ma

Step 1Beat egg, add milk to eggs, add rest as it comes. Add rice last, grated cheese, etc. Bake 45 min over hot water at 350 degrees. Bake in 2 sections. Serve with condensed mushroom soup poured over top (heat of course).

Step 2Watch this as sometimes it takes much longer to bake & I test center to see if congealed if not bake until it is.
