Found this one in Ma's recipe file we found in NC in July 2019, with her note that she got it from Bee Randle.

Ingredients

  • 2 cups cooked rice
  • 1 cup chopped green pepper
  • 1 cup chopped parsley
  • 1 teaspoon salt
  • 2 cups nippy cheddar cheese (barb said this is sharp cheddar)
  • 3 eggs, beaten
  • 1/2 cup butter or oleo
  • 1 cup milk
  • 1 teaspoon onion, finely chopped (small onion)

How To Make green rice, ma

  • Step 1
    Beat egg, add milk to eggs, add rest as it comes. Add rice last, grated cheese, etc. Bake 45 min over hot water at 350 degrees. Bake in 2 sections. Serve with condensed mushroom soup poured over top (heat of course).
  • Step 2
    Watch this as sometimes it takes much longer to bake & I test center to see if congealed if not bake until it is.
