This was my Grandma's recipe to use up extra onions in her garden. She made everything from scratch, including pie crust. I make it easier by using store bought pie crust.

Ingredients

3 large
sweet onions, sliced thin
1 Tbsp
butter
3 large
eggs
2 c
cream or half and half
salt and freshly ground black pepper to taste
1/2 tsp
paprika
6 slice
bacon, cooked and crumbled
1/2 c
shredded cheddar cheese
1
pastry for double crust pie

Step-By-Step

1In a skillet, saute onions in butter, stiring constantly, until golden brown and carmelized.
2In a bowl, beat together eggs and cream. Add the onions, salt, pepper, and paprika.
3Line a deep-dish 9 inch pie plate with bottom pastry. Add egg mixture; sprinkle with bacon and cheese. Roll out remaining pastry to fit top of pie. Place over filling. Seal and flute the edges; cut slits in top.
4Bake at 350 degrees F for 55-60 minutes or until crust is golden brown. Let stand 15 minutes before cutting. Refrigerate leftovers.
