This is a great potluck recipe. Everyone seems to like it, and it makes enough for ten people.

Ingredients

  • 6 medium gold potatoes
  • 16 ounces sour cream
  • 2 1/2 cups sharp cheddar cheese, shredded
  • 1 3/4 cups green onions, chopped
  • 3 tablespoons milk
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup fine, dry bread crumbs
  • 2 tablespoons butter, melted

How To Make golden potato casserole

  • Step 1
    Cook the potatoes in boiling salted water to cover for 20 minutes or until tender. Drain and let cool.
  • Step 2
    Peel and coarsely grate the potatoes. Combine the grated potato, sour cream, and the next 5 ingredients in a large bowl; stir well.
  • Step 3
    Spoon the potato mixture into a greased 13 x 9 x 2-inch baking dish.
  • Step 4
    Combine the bread crumbs and melted butter in a small bowl; stir well. Sprinkle the bread crumbs evenly over the casserole.
  • Step 5
    Bake at 350 degrees F for 50 minutes or until thoroughly heated.
