I've been making this casserole since the 80's. Amazingly enough, even the kids would ask for it! And it always goes over well at our potlucks, too!

Ingredients For cheesy garden casserole

2 cupscooked brown rice

2 cupsbroccoli, 1 inch pieces

1 cupcarrots, sliced

1 cupzucchini, sliced

1 cupcut green beans

1 16 oz canmarinara sauce

1 cupsharp cheese, grated

1 cupmonterey jack cheese, grated
How To Make cheesy garden casserole

1Cook veggies in simmering salted water until tender, 5-7 minutes; drain.

2Place cooked rice in bottom of sprayed 9X13 baking dish.

3Place vegetables over rice. Cover with marinara sauce. Cover with foil and bake 375°F 30 minutes.

4Combine cheeses, spread over top. Place back in oven for 5 - 8 minutes or so, until cheese has melted.
