Hubby loves eggplant. So I was happy to find this recipe in Ma's recipe file we found in NC in July 2019. There were not directions...lol.

- 1 cup butter
- 1 large onion
- 2 stalks celery
- 1 can water chestnuts
- 1 can mushrooms
- 2 teaspoons beau monde seasoning
- 2 eggs
- 3 tablespoons cracker crumbs
