Ingredients

1/2lb. yellow squash- cubed

1 cchopped onion

1 Tbspbutter, melted
-
1 cof light sour cream
-
1 can(s)of light cream of chicken soup-undiluted
-
1 can(s)8 oz. can water chestnuts-drained and chopped
-
16 oz. pkg.chicken stuffing mix
-
6 Tbspmelted butter(unsalted)
-
1 cchopped walnuts(save some for the top of casserrole
-
2 cloveof fresh minced garlic.
How to Make CRUNCHY NUTTY SQUASH CASSEROLE.
- Cook squash and drained well.Saute`onions and garlic in 1 T. of butter ,make sure to keep stirring and not to burn the garlic.( saute vegts.on medium heat.
- Combined squash, onions and garlic ,sour cream and cream of soup chestnuts and walnuts.
- MIX VERY WELL.IN a small bowl combine stuffing mix, and 6 T. of unsalted butter.Mix well.ADD 3/4 of stuffing to squash mixture.
- SPOON into greased 2 qt. casserole dish .TOP with the remaining stuffing .And top it with some left over walnuts or even sliced almonds.
- BAKE IT 350* for 20 minutes or until bubbly.
- AND ENJOY IT SERVE IT WITH GRILLED ,Chicken breast,or griddle ham or whatever meat you like .OR just enjoy the casserole .
