Ingredients

  • 1 can cream of chicken soup (10.5 oz)
  • 1/2 cup milk
  • 2 eggs, slightly beaten
  • 1 can whole kernel corn, drained (15 oz)
  • 1 box Jiffy corn muffin mix
  • 1/4 cup sharp cheddar cheese or Parmesan cheese - your choice
  • 1 can Fench fried onions, divided

How To Make crunchy french fried onion topped corn casserole

  • Step 1
    Prepare a 1 1/2 quart casserole dish.
  • Step 2
    In a bowl, whisk together the soup, milk, and eggs until well mixed.
  • Step 3
    Add drained corn, muffin mix, cheese, and 2/3 cups of the onions.
  • Step 4
    Add the corn mixture to the casserole dish.
  • Step 5
    Bake for 30 minutes at 350 degrees F or until heated through.
  • Step 6
    Scatter remaining French fried onions over the top of the casserole and bake an additional 5 minutes, until golden brown on top.
