we all love sweet potato casserole around here and this one is really good

  • 5 medium
    to large sweet potatoes
  • 2 c
    chicken broth
  • 1/4 c
    butter, cubed
  • 2
    eggs, lightly beaten
  • 1 tsp
    vanilla extract
  • 1 c
    brown sugar

  • 1/2 c
    brown sugar
  • 1/3 c
    butter, melted
  • 1/3 c
  • 1 c
    chopped pecans

How to Make Crock Pot Sweet Potato Casserole


  1. Peel sweet potatoes and cut into even 1-2 inch cubes. Place the potatoes into crock pot and add the chicken broth and sprinkle the cubed butter on top.
  2. Cover and cook on high for 3 hours or until the sweet potatoes are soft enough to mash.
  3. Use a potato masher and mash the potatoes to your desired consistency.
  4. Add the lightly beaten eggs and vanilla to the crock pot and stir to combine.
  5. In a separate bowl combine the topping ingredients and stir to coat. Sprinkle over the mashed sweet potatoes, replace the lid and continue to cook on high for 2 more hours.
  6. Serve warm right out of the crock pot.
