Ingredients
- 1 pound pearl onions, trimmed and peeled
- 3 slices bacon, cut into small pieces
- 1 tablespoon unsalted butter
- 1/3 cup roasted red peppers, chopped
- 2 cloves garlic (large), pressed
- 1 tablespoon unbleached all-purpose flour
- 1 cup heavy cream
- 1/2 tablespoon cooking sherry
- 1/2 teaspoon dried thyme leaves
- freshly ground mixed peppercorns, to taste
- 1 tablespoon fresh chopped parsley, for garnish
How To Make creamed pearl onions with bacon

Step 1In a cold skillet, add bacon pieces and turn the heat on medium. Cook until crispy, about 10 to 15 minutes.

Step 2Using a slotted spoon, transfer them to a bowl and set aside. Keep 1 Tbsp bacon fat and save the rest for other recipes.

Step 3In the same skillet, melt butter before adding prepped pearl onions; sauté for 5 minutes or until golden brown.

Step 4Add roasted red peppers and sauté for 2 minutes. Add garlic and sauté for 1 minute.

Step 5Sprinkle on flour and stir to coat; cook for 1:30 to 2 minutes.

Step 6Pour in half-and-half, and cooking sherry; season with thyme and pepper.

Step 7Return bacon pieces to the skillet, but keep some on the side for garnish.

Step 8Stir well, and when it starts bubbling again, reduce the heat to medium-low and simmer gently for 5 minutes or until the sauce thickens; taste and adjust the seasoning if needed.

Step 9Just before serving, sprinkle on some fresh chopped parsley.
