This recipe is from a friend...I lost my mom's recipe but this is the same one she used. Delicious comfort food and a great potluck dish.

Ingredients

  • 2 large eggs, lightly beaten
  • 1 can cream style corn, 15 oz.
  • 1 can whole kernel corn, do not drain
  • 1 can evaporated milk, 6 oz.
  • 1/2 - chopped onion, 1/4 c - 1/3 c
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 - sleeve saltine crackers, crushed
  • 12 ounces shredded cheese; monterey jack, colby, cheddar, etc.
  • 4 tablespoons butter, cubed

How To Make cracker corn pudding

  • Step 1
    Preheat oven to 325. Grease 13 X 9 pan.
  • Step 2
    Beat eggs slightly in a large bowl.. Stir in whole kernel corn (do not drain) and cream-style corn. Add evaporated milk, onion, butter, salt and pepper. Fold in crackers and shredded cheese. Pour into baking dish. Bake 1 hour or until set. Let stand a few minutes and enjoy!
