Cracker Corn Pudding

Ingredients

2 largeeggs, lightly beaten

1 can(s)cream style corn, 15 oz.

1 can(s)whole kernel corn, do not drain

1 can(s)evaporated milk, 6 oz.

1/2chopped onion, 1/4 c - 1/3 c

1/2 tspsalt

1/4 tsppepper
-
1sleeve saltine crackers, crushed
-
12 ozshredded cheese; monterey jack, colby, cheddar, etc.

4 Tbspbutter, cubed
How to Make Cracker Corn Pudding
- Preheat oven to 325. Grease 13 X 9 pan.
- Beat eggs slightly in a large bowl.. Stir in whole kernel corn (do not drain) and cream-style corn. Add evaporated milk, onion, butter, salt and pepper. Fold in crackers and shredded cheese. Pour into baking dish. Bake 1 hour or until set. Let stand a few minutes and enjoy!
