This recipe is from a friend...I lost my mom's recipe but this is the same one she used. Delicious comfort food and a great potluck dish.

Ingredients For cracker corn pudding

  • 2 lg
    eggs, lightly beaten
  • 1 can
    cream style corn, 15 oz.
  • 1 can
    whole kernel corn, do not drain
  • 1 can
    evaporated milk, 6 oz.
  • 1/2
    chopped onion, 1/4 c - 1/3 c
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1
    sleeve saltine crackers, crushed
  • 12 oz
    shredded cheese; monterey jack, colby, cheddar, etc.
  • 4 Tbsp
    butter, cubed

How To Make cracker corn pudding

    Preheat oven to 325. Grease 13 X 9 pan.

    Beat eggs slightly in a large bowl.. Stir in whole kernel corn (do not drain) and cream-style corn. Add evaporated milk, onion, butter, salt and pepper. Fold in crackers and shredded cheese. Pour into baking dish. Bake 1 hour or until set. Let stand a few minutes and enjoy!
