cornbread dressing

I'm getting older, so my elders are passing away. There was always a bit of competition among my aunts and grandmothers about dressing and chocolate pies. This is one of the dressings that was always a hit a family gatherings. I don't want to start an argument between younger family members by stating who's it was!!

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 1 1/2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg, beaten
  • 3 cups chicken broth
  • 2 cups celery, chopped
  • 2 cups onions, chopped (vidalia or Texas sweet preferred)
  • 1/2 cup green onions, chopped
  • 1/4 cup dried parsley flakes
  • 1/2 teaspoon poultry seasoning, or more to taste

How To Make cornbread dressing

  • Step 1
    Combine the first 4 ingredients in a large bowl. Make a well in the center of the mixture.
  • Step 2
    Combine the milk, oil, and egg. Add the wet ingredients to the well of the dry ingredients. Stir just until moistened. Pour the batter into a greased 9-inch baking dish. Bake at 400 degrees F for 25 minutes or until a wooden pick comes out clean. Cool in a dish on a wire rack. Once cool, crumble the cornbread into a large bowl.
  • Step 3
    Combine the broth, celery, onions, green onions, poultry seasoning, and parsley flakes in a saucepan. Bring to a boil. Reduce heat. Simmer, uncovered for 10 to 12 minutes until the vegetables are tender.
  • Step 4
    Add to the reserved crumbled cornbread. Stir well. Spoon into a greased 13x9x2 inch baking dish. Bake at 350 degrees F for 40 minutes or until golden brown on top.
