I make this dish for holiday dinners. I usually double the recipe.

Ingredients

  • 1/2 cup butter
  • 1 package jiffy corn muffin mix
  • 1 medium onion, chopped
  • 1 - egg, beaten
  • 1 medium green pepper, chopped
  • 1 cup shredded cheddar cheese
  • 1 can whole corn kernels, drained
  • 1 can corn, cream style
  • - salt & pepper to taste

How To Make cornbread casseole

  • Step 1
    Saute onion and green pepper in 1/2 cup butter.
  • Step 2
    Mix onion and peppers with all other ingredients.
  • Step 3
    Place in greased casserole dish - 8 X 8 inches
  • Step 4
    Top with the 1 cup grated cheese.
  • Step 5
    Bake uncovered at 375 degrees for 45 minutes to 1 hour, until firm.
  • Step 6
    Double this recipe and it fits into a 13 X 9 inch casserole dish.
