This is another recipe by Madelyn Young. It is a good dish for pot-luck suppers as well as family gatherings. Madelyn added this note: "You can half this recipe for a smaller casserole. I do this quite often just for Robin and me. You will still need to bake it on 350 degrees for 40 minutes, though."

Ingredients For corn casserole

  • 2 can
    cream-style corn
  • 4
    eggs (beaten)
  • 1
    small jar diced pimento, drained
  • 1/2 tsp
    garlic powder
  • 1/4 c
    chopped onion
  • 1/2 c
    cooking oil
  • 1 c
    mexian cornbread mix (use the full envelope of martha white mix)
  • grated cheese

How To Make corn casserole

  • 1
    Combine all ingredients. Pour into a greased casserole dish (11" by 13"). Top with grated cheese.

    Bake at 350 degrees for 40 minutes.
