This salad/side dish is great for a Luau themed party or anything with teriyaki sauce. Looks beautiful if served in a cored out 1/2 of a pineapple or melon.

Ingredients
- 1 box fried rice mix, or almond fried rice mix
- 1 small jar of marinated artichoke hearts, drain and save liquid
- 1 small can of sliced black olives
- 1 small can of sliced water chestnuts
- 1/4 cup green bell peppers, diced small
- 3 - spring onions, sliced (use all the onion, green and white)
- 1 small jar of red pimentos, diced
- 1/4 cup mayonnaise
- 1 small pckg of slivered almonds
How To Make cold rice salad

Step 1Prepare Fried Rice mix according to directions. Cool 5 minutes then add all other ingredients; mix and chill (add some of the retained artichoke hearts liquid if it is dry) serve cold.
