This salad/side dish is great for a Luau themed party or anything with teriyaki sauce. Looks beautiful if served in a cored out 1/2 of a pineapple or melon.

Ingredients

1 boxfried rice mix, or almond fried rice mix

1 smalljar of marinated artichoke hearts, drain and save liquid

1 smallcan of sliced black olives

1 smallcan of sliced water chestnuts

1/4 cgreen bell peppers, diced small
-
3spring onions, sliced (use all the onion, green and white)

1 smalljar of red pimentos, diced

1/4 cmayonnaise

1 smallpckg of slivered almonds
How to Make Cold Rice Salad
- Prepare Fried Rice mix according to directions. Cool 5 minutes then add all other ingredients; mix and chill (add some of the retained artichoke hearts liquid if it is dry) serve cold.
