Ingredients
- 3 cups cooked white or brown rice
- 1 can (16-ozs) kidney beans, rinsed and drained
- 1 - medium onion, chopped
- 1 can (4-ozs) chopped green chilies
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon creole seasoning
- 1/2 teaspoon salt
- 2 cups shredded sharp cheddar cheese, divided

Step 1In a greased 2 quart baking dish, combine all ingredients except cheese.

Step 2Top with 1-1/2 cups of cheese. Cover and bake at 350 degrees for 25 minutes.

Step 3Sprinkle with remaining cheese. Bake, uncovered, 10 minutes longer.
