When a recipe calls for cooked rice, you can conveniently prepare it earlier in the day or even the day before and then refrigerate until ready to use.

Plus, you'll find it's easier to mix well-chilled cooked rice with other ingredients.

This recipe is another family favorite that the kids will love. Easy to assemble and will give you a little taste of the Cajun cooking with the green chilies and kidney beans.

Go easy on the Creole seasoning if you don't want it to be too spicy.

cooked white or brown rice
1 can(s)
(16-ozs) kidney beans, rinsed and drained
medium onion, chopped
1 can(s)
(4-ozs) chopped green chilies
2 clove
garlic, minced
2 tsp
chili powder
2 tsp
ground cumin
1 tsp
dried oregano
1 tsp
creole seasoning
1/2 tsp
2 c
shredded sharp cheddar cheese, divided

How to Make Chili-Cheese Bake


  • 1In a greased 2 quart baking dish, combine all ingredients except cheese.
  • 2Top with 1-1/2 cups of cheese. Cover and bake at 350 degrees for 25 minutes.
  • 3Sprinkle with remaining cheese. Bake, uncovered, 10 minutes longer.
