Plus, you'll find it's easier to mix well-chilled cooked rice with other ingredients.

This recipe is another family favorite that the kids will love. Easy to assemble and will give you a little taste of the Cajun cooking with the green chilies and kidney beans.

Go easy on the Creole seasoning if you don't want it to be too spicy.

Ingredients

  • 3 c
    cooked white or brown rice
  • 1 can(s)
    (16-ozs) kidney beans, rinsed and drained
  • 1
    medium onion, chopped
  • 1 can(s)
    (4-ozs) chopped green chilies
  • 2 clove
    garlic, minced
  • 2 tsp
    chili powder
  • 2 tsp
    ground cumin
  • 1 tsp
    dried oregano
  • 1 tsp
    creole seasoning
  • 1/2 tsp
    salt
  • 2 c
    shredded sharp cheddar cheese, divided

How to Make Chili-Cheese Bake

Step-by-Step

  1. In a greased 2 quart baking dish, combine all ingredients except cheese.
  2. Top with 1-1/2 cups of cheese. Cover and bake at 350 degrees for 25 minutes.
  3. Sprinkle with remaining cheese. Bake, uncovered, 10 minutes longer.
