Easy to assemble and will give you a little taste of the Cajun cooking with the green chilies and kidney beans. Go easy on the Creole seasoning if you don't want it to be too spicy.

Ingredients For chili-cheese bake

    cooked white or brown rice
  • 1 can
    (16-ozs) kidney beans, rinsed and drained
  • 1
    medium onion, chopped
  • 1 can
    (4-ozs) chopped green chilies
  • 2 clove
    garlic, minced
  • 2 tsp
    chili powder
  • 2 tsp
    ground cumin
  • 1 tsp
    dried oregano
  • 1 tsp
    creole seasoning
  • 1/2 tsp
    salt
  • 2 c
    shredded sharp cheddar cheese, divided

How To Make chili-cheese bake

    In a greased 2 quart baking dish, combine all ingredients except cheese.

    Top with 1-1/2 cups of cheese. Cover and bake at 350 degrees for 25 minutes.

    Sprinkle with remaining cheese. Bake, uncovered, 10 minutes longer.
