When a recipe calls for cooked rice, you can conveniently prepare it earlier in the day or even the day before and then refrigerate until ready to use. Plus, you'll find it's easier to mix well-chilled cooked rice with other ingredients. This recipe is another family favorite that the kids will love. Easy to assemble and will give you a little taste of the Cajun cooking with the green chilies and kidney beans. Go easy on the Creole seasoning if you don't want it to be too spicy.

Ingredients

  • 3 cups cooked white or brown rice
  • 1 can (16-ozs) kidney beans, rinsed and drained
  • 1 - medium onion, chopped
  • 1 can (4-ozs) chopped green chilies
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon creole seasoning
  • 1/2 teaspoon salt
  • 2 cups shredded sharp cheddar cheese, divided

How To Make chili-cheese bake

  • Step 1
    In a greased 2 quart baking dish, combine all ingredients except cheese.
  • Step 2
    Top with 1-1/2 cups of cheese. Cover and bake at 350 degrees for 25 minutes.
  • Step 3
    Sprinkle with remaining cheese. Bake, uncovered, 10 minutes longer.
