Ingredients
- 1 3/4 pounds peeled carrots
- 1 cup brown sugar, packed
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons vanilla
- 2 tablespoons flour
- 3 eggs, well beaten
- 1 stick butter, room temp
- powdered sugar for garnish
How To Make carrot souffle

Step 1Preheat oven to 350, grease a 2 qt baking dish

Step 2Cook carrots until very soft, drain well.

Step 3Transfer to large mixing bowl. While still warm add sugar, baking powder and vanilla. Beat until smooth.

Step 4Add flour and mix well.

Step 5Add eggs and mix well.

Step 6Add butter and mix well.

Step 7Transfer to baking dish and bake 1 hour, top should be golden brown. Garnish with powdered sugar.
