    onion, chopped
  • 4 c
    rice, cooked
  • 2 c
    sour cream
  • 1 c
    cottage cheese
  • 1 large
    bay leaf , crushed
  • 1/2 tsp
    salt, optional
  • tsp
  • 12 oz
    green chiles, drained and halved with seeds
  • 2 c
    cheddar cheese, grated
  • ·
    parsley, chopped

How to Make California Casserole


  1. Preheat oven to 375. Lightly grease a 12 x 8 x 2-inch baking dish (2-quart).
  2. In hot butter in large skillet, saute onion until golden about 5 minutes.
  3. Remove from heat; stir in hot rice, sour cream, cottage cheese, bay leaf, salt (optional), and pepper; toss lightly to mix well.
  4. Layer half the rice mixture in bottom of baking dish, then half of chiles; sprinkle with half of cheddar cheese; repeat.
  5. Bake, uncovered, 25 minutes, or until bubbly and hot. Sprinkle with chopped parsley.
