This recipes is great for potlucks or family meals. Also it can easily be divided for smaller families.

Ingredients

  • 4 cups brown rice, cooked
  • 2 pounds ground beef
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 4 teaspoons sage, dried
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 cups milk
  • 2 - celery ribs, chopped
  • 1/2 large bell pepper
  • 1/2 medium onion, chopped
  • 2 cans cream of mushroom soup
  • 2 cans mushrooms (4 oz. cans)
  • 4 ounces shredded cheese

How To Make brown rice casserole

  • Step 1
    Cook ground beef with salt, pepper, sage, and cayenne pepper until browned and no pink remains. Drain.
  • Step 2
    Stir in rice, milk, celery, green pepper, onion, soup, and mushrooms.
  • Step 3
    Transfer to a lightly oiled 13x9x2-inch pan or large casserole. Sprinkle cheese over top.
  • Step 4
    Cook uncovered in 350 degree oven 45 minutes or until center is bubbly.
