broccoli cheddar casserole
This goes well as a side dish with oven baked breaded chicken. Whenever I make this there are NEVER any left overs.

Ingredients
- 2 packages broccoli, frozen
- 1 can cream of mushroom soup, undiluted
- 1 cup mayonnaise
- 2 large eggs
- 1 cup cheddar cheese, shredded
- 1 dash pepper
- 1/2 package crushed ritz crackers, for topping
- 4 tablespoons butter, room temperature
How To Make broccoli cheddar casserole

Step 1Cook broccoli in boiling salted water for 5-10 minutes. Drain well.

Step 2Combine soup, mayonnaise, eggs, cheese and pepper in a bowl. Mix well.

Step 3Slowly add broccoli, stirring so that the mixture covers all the broccoli.

Step 4Pour into a lightly greased 2-quart baking dish, then sprinkle with crushed Ritz crackers and dot with butter.

Step 5Bake at 350°F for 30 minutes or until it bubbles and browns.
