This goes well as a side dish with oven baked breaded chicken. Whenever I make this there are NEVER any left overs.

Ingredients

  • 2 packages broccoli, frozen
  • 1 can cream of mushroom soup, undiluted
  • 1 cup mayonnaise
  • 2 large eggs
  • 1 cup cheddar cheese, shredded
  • 1 dash pepper
  • 1/2 package crushed ritz crackers, for topping
  • 4 tablespoons butter, room temperature

How To Make broccoli cheddar casserole

  • Step 1
    Cook broccoli in boiling salted water for 5-10 minutes. Drain well.
  • Step 2
    Combine soup, mayonnaise, eggs, cheese and pepper in a bowl. Mix well.
  • Step 3
    Slowly add broccoli, stirring so that the mixture covers all the broccoli.
  • Step 4
    Pour into a lightly greased 2-quart baking dish, then sprinkle with crushed Ritz crackers and dot with butter.
  • Step 5
    Bake at 350°F for 30 minutes or until it bubbles and browns.
