broccoli casserole "school's"

I worked as a cook at an elementary school and we made this at least once a month. The kids actually loved it and even bought it on our ala-carte line. I've cut down the recipe to fit a family of 5. We never really had a recipe, we just "knew" how to put it together to feed 600 hungry children.

Ingredients
- 2 packages thawed , chopped broccoli
- 5 cups shredded sharp american cheese
- 1 1/2 packages ritz crackers, (sleeves, not boxes)
- 2 sticks melted butter
- - salt and pepper to taste
How To Make broccoli casserole "school's"

Step 1pre heat oven 350 degrees. spray casserole dish with cooking spray, evenly distribute thawed broccoli. season with salt and pepper

Step 2distribute cheese over top covering all the broccoli. you may use sliced cheese, I prefer kraft's deluxe american cheese 16 slices but grated sharp american is the best, was what the school had.

Step 3crush crackers and toss with the melted butter. you may use margarine, but butter is my preference. cover cheese with crumb mixture.

Step 4cover with foil and bake 30 minutes. remove foil and brown crackers, until cheese is bubbly. about another 10 to 15 minutes.
