broccoli casserole "school's"

I worked as a cook at an elementary school and we made this at least once a month. The kids actually loved it and even bought it on our ala-carte line. I've cut down the recipe to fit a family of 5. We never really had a recipe, we just "knew" how to put it together to feed 600 hungry children.

Ingredients

  • 2 packages thawed , chopped broccoli
  • 5 cups shredded sharp american cheese
  • 1 1/2 packages ritz crackers, (sleeves, not boxes)
  • 2 sticks melted butter
  • - salt and pepper to taste

How To Make broccoli casserole "school's"

  • Step 1
    pre heat oven 350 degrees. spray casserole dish with cooking spray, evenly distribute thawed broccoli. season with salt and pepper
  • Step 2
    distribute cheese over top covering all the broccoli. you may use sliced cheese, I prefer kraft's deluxe american cheese 16 slices but grated sharp american is the best, was what the school had.
  • Step 3
    crush crackers and toss with the melted butter. you may use margarine, but butter is my preference. cover cheese with crumb mixture.
  • Step 4
    cover with foil and bake 30 minutes. remove foil and brown crackers, until cheese is bubbly. about another 10 to 15 minutes.
