Growing up in Louisiana for awhile and my mama being from Louisiana we love Boudin sausage. This recipe is easy to make and so delicious. I serve it with greens or black eye peas. It is very tasty.

Ingredients

  • 2 packages cornbread mix, mexican style
  • 1 can corn, cream-style
  • 4 - 6 links of boudin, cooked
  • 1 cup cheddar cheese, shredded
  • 1/2 jalapenos, fresh chopped

How To Make boudin cornbread

  • Step 1
    Prepare the cornbread mix as directed on the package. I used Martha White Mexican Style.
  • Step 2
    To the cornbread mixture add the can of cream style corn and the chopped jalapeño. (You can use less or more jalapeño depending on your preference)
  • Step 3
    Remove the casing from the boudin and crumble the boudin. Add to the cornbread mixture and stir well.
  • Step 4
    Add the cheese and stir
  • Step 5
    Pour into a greased 9 x 13 pan and bake at 425° for 20 to 25 minutes.
