This recipe is my own creation, inspired by a lack of time. We all have those days. I threw it in a dish, baked it, and was completely amazed at how good it turned out. I will never make scalloped potatoes any other way. Since that day, I have experimented with smaller portions of this dish, such as a small mini loaf pan, which is just the perfect serving for two people. You may use any size dish; just adjust the ingredients accordingly. I originally made this in a 9-inch, square, copper skillet. You can add other ingredients to suit you. Just make sure you stick to the basic recipe. Enjoy!

Ingredients

  • 6 large slick-skinned red potatoes
  • 1 cup heavy whipping cream, divided
  • McCormick season salt, to taste
  • 1 pinch garlic powder
  • 1 pinch dried thye
  • 1 teaspoon fresh ground black pepper
  • 1 cup grated Swiss cheese, like Tillamook
  • 1/4 cup grated Parmesan cheese, divided
  • 3 tablespoons butter, diced small
  • Salad Supreme, to sprinkle on top

How To Make bonnie's heavenly potatoes

  • Bonnie's Heavenly Potatoes for two.  However, you can make an 8 inch dish or a 9 X13 inch dish, or as much as you like for a crowd using this technique.
    Step 1
    Tips: I have used a 9-inch copper skillet, which is my favorite. 8- or 9-inch Glass dishes, such as Pyrex, are fine to use. I have also used a 9 X13 Pyrex baking dish and a ceramic mini loaf pan. The amounts listed in the recipe are for an 8 or 9-inch baking dish. Use kitchen spray to lightly grease the skillet or baking dish.

    ~ Cook's Notes: ~About the cheese: Keep the Parmesan ingredient, but you can substitute the Swiss cheese for any cheese of your choice, and it should work. I especially like Mexican 4 cheese by Tillamook, and another favorite is Colby Jack. It depends on what I am serving with it as to what cheese I choose to use. ~About the butter: I use the amount of butter indicated in the recipe, 3 tablespoons for 6 large potatoes. Any more than that is too much and will sink to the bottom of the dish. Add or reduce butter according to the size of your dish. You can always use less butter, too. Make this recipe your own.

    Wash 6 large slick-skinned potatoes. (I like this type of potato because it doesn't have "eyes" and is easier to peel, and the red potatoes are just wonderful in this dish) Shake off excess water and place them on the tray of your microwave. Pierce the skin of each potato with a fork and bake in the microwave for 6 to 8 minutes. Test with a fork to see if they are done; if not, add a minute to the time until they are done. Don't overcook. Remove and set aside to cool before handling. I peel them while they are still warm. I scrape them with a serrated knife or use the tines of a fork to rake the peelings off. Cut the potatoes in half. Put the cut side down on the cutting board and then cut slices about 1/4 inch thick.
  • Step 4
    FIRST LAYER: You will make two layers of potatoes for this recipe. Lay half of the peeled potato slices close together in the bottom of the greased dish. Sprinkle the seasoning salt lightly over the first layer of potatoes, and add a pinch of garlic powder and thyme, and black pepper to taste. Add 1/2 of the grated Swiss cheese and half of the fresh grated Parmesan cheese. Add the 1 1/2 tablespoons of fine-diced butter. Drizzle 1/2 cup of heavy whipping cream evenly over the first layer.
  • Step 5
    SECOND LAYER: Add the rest of the slices of potatoes to the baking dish. Sprinkle the seasoned salt over the potatoes, and add a pinch of garlic powder and thyme, and black pepper to taste. Add 1/2 of the grated Swiss cheese and half of the fresh grated Parmesan cheese. Add the 1 1/2 tablespoons of fine diced butter. Drizzle the remaining 1/2 cup of heavy whipping cream evenly over the second and last layer. Sprinkle Salad Supreme over the top.

    Step 6
    BAKE: Preheat oven to 425 degrees. Bake 25 minutes or until nice and brown. If using a mini loaf pan, it will only take about 20 minutes. Ovens can differ; adjust the time according to yours. Let the potatoes sit for 5 minutes before serving. Enjoy!
