One of our family favorites. Goes great with Steak and is a great alternative to potatoes.

Ingredients

  • - 1 cup pearl barley
  • - 1 tablespoon butter
  • - 1 small onion, minced
  • - 2 cans beef broth
  • - 1 4-oz can mushrooms, plus liquid
  • - 1/4 teaspoon nutmeg
  • - salt to taste

How To Make barley side dish

  • Step 1
    Melt butter in a frying pan. Add the onion and barley and cook until onion is tender and barley is lightly browned.
  • Step 2
    Add the beef broth, canned mushrooms with liquid and nutmeg. Put all ingredients in a large baking dish.
  • Step 3
    Bake, uncovered in a 350 degree oven for 60 plus minutes, or until all liquid is absorbed. In my oven, it takes at least 75 minutes. This is a great alternative to potatoes.
