Ingredients
- - 1 cup pearl barley
- - 1 tablespoon butter
- - 1 small onion, minced
- - 2 cans beef broth
- - 1 4-oz can mushrooms, plus liquid
- - 1/4 teaspoon nutmeg
- - salt to taste
How To Make barley side dish

Step 1Melt butter in a frying pan. Add the onion and barley and cook until onion is tender and barley is lightly browned.

Step 2Add the beef broth, canned mushrooms with liquid and nutmeg. Put all ingredients in a large baking dish.

Step 3Bake, uncovered in a 350 degree oven for 60 plus minutes, or until all liquid is absorbed. In my oven, it takes at least 75 minutes. This is a great alternative to potatoes.
