1 cup pearl barley
1 tablespoon butter
1 small onion, minced
2 cans beef broth
1 4-oz can mushrooms, plus liquid
1/4 teaspoon nutmeg
salt to taste

How to Make Barley Side Dish


  • 1Melt butter in a frying pan. Add the onion and barley and cook until onion is tender and barley is lightly browned.
  • 2Add the beef broth, canned mushrooms with liquid and nutmeg. Put all ingredients in a large baking dish.
  • 3Bake, uncovered in a 350 degree oven for 60 plus minutes, or until all liquid is absorbed. In my oven, it takes at least 75 minutes. This is a great alternative to potatoes.
