Barley Side Dish
·1 cup pearl barley
·1 tablespoon butter
·1 small onion, minced
·2 cans beef broth
·1 4-oz can mushrooms, plus liquid
·1/4 teaspoon nutmeg
·salt to taste
How to Make Barley Side Dish
- Melt butter in a frying pan. Add the onion and barley and cook until onion is tender and barley is lightly browned.
- Add the beef broth, canned mushrooms with liquid and nutmeg. Put all ingredients in a large baking dish.
- Bake, uncovered in a 350 degree oven for 60 plus minutes, or until all liquid is absorbed. In my oven, it takes at least 75 minutes. This is a great alternative to potatoes.
