This is a recipe my grandmother used to make all the time. It is one of our family favorites

Ingredients

  • 1 stick margarine
  • 1 cup quick cooking barley
  • 1 medium onion, chopped
  • 1 - packet onion soup mix
  • 1 can chicken broth
  • 1 can mushrooms, 4oz with juice
  • 1 can water chestnuts, 4 oz sliced, drained

How To Make barley casserole

  • Step 1
    Pre-heat oven to 350. Melt Margarine in a large skillet, add onions and barley. Saute until golden brown.
  • Step 2
    To the skillet; Add dry onion soup mix and chicken broth, then add mushrooms with juice and water chestnuts.
  • Step 3
    Transfer to a greased 2 quart casserole dish, cover and bake for 1 hour, then uncover and bake until golden brown.
