This is a recipe my grandmother used to make all the time. It is one of our family favorites

  • 1 stick
  • 1 c
    quick cooking barley
  • 1 medium
    onion, chopped
  • 1
    packet onion soup mix
  • 1 can(s)
    chicken broth
  • 1 can(s)
    mushrooms, 4oz with juice
  • 1 can(s)
    water chestnuts, 4 oz sliced, drained

How to Make Barley Casserole


  1. Pre-heat oven to 350. Melt Margarine in a large skillet, add onions and barley. Saute until golden brown.
  2. To the skillet; Add dry onion soup mix and chicken broth, then add mushrooms with juice and water chestnuts.
  3. Transfer to a greased 2 quart casserole dish, cover and bake for 1 hour, then uncover and bake until golden brown.
