Ingredients
- 1/2 pound mushrooms
- 1 large onion, finely chopped
- 4 tablespoons butter
- 1 cup barley
- - "just a pinch" of salt
- - "just a pinch" of pepper
- 3 cups beef broth
- - almonds, slivered and toasted
How To Make barley casserole

Step 1Saute mushrooms and onions in butter.

Step 2Don\'t let onions brown.

Step 3Mix in barley, salt and pepper.

Step 4Pour into buttered 1 1/2 quart casserole.

Step 5Cover with broth to 1/2 inch above barley.

Step 6Cover and bake at 350 degrees for 45 minutes, until liquid is absorbed and barley is tender.

Step 7Garnish with almonds.
