onion, finely chopped
4 Tbsp
1 c
"just a pinch" of salt
"just a pinch" of pepper
3 c
beef broth
almonds, slivered and toasted

How to Make Barley Casserole


  • 1Saute mushrooms and onions in butter.
  • 2Don't let onions brown.
  • 3Mix in barley, salt and pepper.
  • 4Pour into buttered 1 1/2 quart casserole.
  • 5Cover with broth to 1/2 inch above barley.
  • 6Cover and bake at 350 degrees for 45 minutes, until liquid is absorbed and barley is tender.
  • 7Garnish with almonds.
