  • 1 large
    onion, finely chopped
  • 4 Tbsp
  • 1 c
  • ·
    "just a pinch" of salt
  • ·
    "just a pinch" of pepper
  • 3 c
    beef broth
  • ·
    almonds, slivered and toasted

How to Make Barley Casserole


  1. Saute mushrooms and onions in butter.
  2. Don't let onions brown.
  3. Mix in barley, salt and pepper.
  4. Pour into buttered 1 1/2 quart casserole.
  5. Cover with broth to 1/2 inch above barley.
  6. Cover and bake at 350 degrees for 45 minutes, until liquid is absorbed and barley is tender.
  7. Garnish with almonds.
