Orzo pasta is such a great substitute for rice. The Tex-Mex ingredients really amp up this dish, and it makes a great side dish for chicken or beef.

Ingredients

  • 1 cup orzo pasta
  • 1 can black beans, rinsed and drained (14.5 oz.)
  • 1 can petite diced tomatoes, drained (14.5 oz.)
  • 1 can mild green chiles (4 oz)
  • 1 clove garlic, pressed
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • chopped cilantro (optional)

How To Make baked tex-mex orzo with black beans and chiles

  • Step 1
    Cook orzo according to package instructions and drain well. Add black beans, tomatoes, green chiles, garlic, cumin, and pepper.
  • Step 2
    Preheat oven to 325 degrees F. Prepare a 1 1/2 quart baking dish and then add the orzo mixture. Evenly sprinkle the top with cheese.
  • Step 3
    Bake casserole for approximately 15 minutes until bubbly and cheese is melted.
  • Step 4
    Serve with salsa, sour cream, and cilantro.
