Ingredients
- 1 cup orzo pasta
- 1 can black beans, rinsed and drained (14.5 oz.)
- 1 can petite diced tomatoes, drained (14.5 oz.)
- 1 can mild green chiles (4 oz)
- 1 clove garlic, pressed
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- chopped cilantro (optional)
How To Make baked tex-mex orzo with black beans and chiles

Step 1Cook orzo according to package instructions and drain well. Add black beans, tomatoes, green chiles, garlic, cumin, and pepper.

Step 2Preheat oven to 325 degrees F. Prepare a 1 1/2 quart baking dish and then add the orzo mixture. Evenly sprinkle the top with cheese.

Step 3Bake casserole for approximately 15 minutes until bubbly and cheese is melted.

Step 4Serve with salsa, sour cream, and cilantro.
