This recipe can easily be halved. It is nice and cheesy, so even kids will eat this (sometimes!). I added the time for cooking the eggs to the prep.

Ingredients
- 2 packages frozen chopped spinach (10 oz)
- 2 tablespoons minced onion
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- 3 large hard-boiled eggs, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon pepper
- 1/2 cup shredded American cheese
- 1/2 cup saltine cracker crumbs
- 1 tablespoon butter, melted
- paprika
How To Make baked spinach

Step 1Cook the spinach according to package directions. Drain well and set aside.

Step 2Saute onions in 3 tablespoons butter in a large skillet over medium heat until tender. Add the flour, stirring well. Cook 1 minute, stirring constantly. Gradually add the milk and cook over medium heat, stirring constantly. Wait until the mixture is thickened and bubbly.

Step 3Add the reserved spinach, eggs, and the next three ingredients. Stir well. Spoon into a buttered shallow 1 1/2-quart baking dish. Sprinkle with the cheese.

Step 4Combine the cracker crumbs and melted butter. Sprinkle over the cheese on the casserole. Then sprinkle with paprika, if desired.

Step 5Bake, uncovered, at 375 degrees F for 20 minutes or until lightly browned.
