This recipe can easily be halved. It is nice and cheesy, so even kids will eat this (sometimes!). I added the time for cooking the eggs to the prep.

Ingredients

  • 2 packages frozen chopped spinach (10 oz)
  • 2 tablespoons minced onion
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 3 large hard-boiled eggs, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon pepper
  • 1/2 cup shredded American cheese
  • 1/2 cup saltine cracker crumbs
  • 1 tablespoon butter, melted
  • paprika

How To Make baked spinach

  • Step 1
    Cook the spinach according to package directions. Drain well and set aside.
  • Step 2
    Saute onions in 3 tablespoons butter in a large skillet over medium heat until tender. Add the flour, stirring well. Cook 1 minute, stirring constantly. Gradually add the milk and cook over medium heat, stirring constantly. Wait until the mixture is thickened and bubbly.
  • Step 3
    Add the reserved spinach, eggs, and the next three ingredients. Stir well. Spoon into a buttered shallow 1 1/2-quart baking dish. Sprinkle with the cheese.
  • Step 4
    Combine the cracker crumbs and melted butter. Sprinkle over the cheese on the casserole. Then sprinkle with paprika, if desired.
  • Step 5
    Bake, uncovered, at 375 degrees F for 20 minutes or until lightly browned.
