Cooked bacon be used instead of bacon bits. I would use 1/4 pound crisply cooked and crumbled bacon.

Ingredients

  • 1 c
    raw long grain white rice
  • 2 c
    water
  • 1 tsp
    salt
  • 1/2 tsp
    vegetable oil
  • 4 oz
    cream cheese, softening
  • 3/4 c
    sour cream
  • 3 Tbsp
    mayonnaise
  • 1 c
    frozen spinach, thawed and water pressed out of it
  • 1/2 c
    sweet onion, finely chopped
  • 1/2 c
    real bacon bits
  • 1 c
    shredded cheddar cheese, divided

How to Make Baked Spinach Rice Bake

Step-by-Step

  1. Preheat oven to 350 degrees. Spray a 2-1/2 quart casserole dish with nonstick cooking spray and set aside.
  2. Combine rice, water, salt and oil in a 2-quart saucepan, then bring almost to a boil over high heat. When water starts to boil, turn heat to low, cover and cook for 15 minutes.
  3. Remove from heat, stir once, then cover and let stand for 5 minutes.
  4. In a medium mixing bowl, combine cream cheese with sour cream and mayonnaise, then beat to blend to smooth.
  5. Stir in spinach, onion, bacon bits, and 1 cup of the cheddar cheese.
  6. Fold in cooked rice thoroughly. Turn into prepared casserole dish.
  7. Sprinkle with remaining cheese . Place in oven and bake for 20 minutes, or until bubbly and heated through.
