Ingredients
- 1 cup raw long grain white rice
- 2 cups water
- 1 teaspoon salt
- 1/2 teaspoon vegetable oil
- 4 ounces cream cheese, softening
- 3/4 cup sour cream
- 3 tablespoons mayonnaise
- 1 cup frozen spinach, thawed and water pressed out of it
- 1/2 cup sweet onion, finely chopped
- 1/2 cup real bacon bits
- 1 cup shredded cheddar cheese, divided
How To Make baked spinach rice bake

Step 1Preheat oven to 350 degrees. Spray a 2-1/2 quart casserole dish with nonstick cooking spray and set aside.

Step 2Combine rice, water, salt and oil in a 2-quart saucepan, then bring almost to a boil over high heat. When water starts to boil, turn heat to low, cover and cook for 15 minutes.

Step 3Remove from heat, stir once, then cover and let stand for 5 minutes.

Step 4In a medium mixing bowl, combine cream cheese with sour cream and mayonnaise, then beat to blend to smooth.

Step 5Stir in spinach, onion, bacon bits, and 1 cup of the cheddar cheese.

Step 6Fold in cooked rice thoroughly. Turn into prepared casserole dish.

Step 7Sprinkle with remaining cheese . Place in oven and bake for 20 minutes, or until bubbly and heated through.
