Cooked bacon be used instead of bacon bits. I would use 1/4 pound crisply cooked and crumbled bacon.

raw long grain white rice

sour cream

frozen spinach, thawed and water pressed out of it
1/2 c
sweet onion, finely chopped
1/2 c
real bacon bits
1 c
shredded cheddar cheese, divided

How to Make Baked Spinach Rice Bake


  • 1Preheat oven to 350 degrees. Spray a 2-1/2 quart casserole dish with nonstick cooking spray and set aside.
  • 2Combine rice, water, salt and oil in a 2-quart saucepan, then bring almost to a boil over high heat. When water starts to boil, turn heat to low, cover and cook for 15 minutes.
  • 3Remove from heat, stir once, then cover and let stand for 5 minutes.
  • 4In a medium mixing bowl, combine cream cheese with sour cream and mayonnaise, then beat to blend to smooth.
  • 5Stir in spinach, onion, bacon bits, and 1 cup of the cheddar cheese.
  • 6Fold in cooked rice thoroughly. Turn into prepared casserole dish.
  • 7Sprinkle with remaining cheese . Place in oven and bake for 20 minutes, or until bubbly and heated through.
