My mother (Sybil) made this recipe for many occasions, and it was immensely enjoyed by our entire family. She usually chopped up everything except the sausage into about 1/4" chunks.

Ingredients

  • 1 lb
    regular or mild sausage
  • 1
    bell pepper, chopped
  • 1
    onion, chopped
  • 7 stalk(s)
    celery, chopped
  • 1 c
    rice, uncooked (not minute rice)
  • 3 pkg
    dried lipton chicken noodle soup
  • 1 can(s)
    water chestnuts, chopped (small can)
  • 1 can(s)
    slivered almonds or 1 (8-oz.) pkg slivered almonds
  • 8 c
    water (about)

How to Make Aunt Arlie's Sausage Casserole

Step-by-Step

  1. Saute onions, pepper and celery.
  2. Brown sausage, and drain off as much grease as possible.
  3. Put all ingredients into large casserole pan. and add 3 or 4 cups water.
  4. Cook at 300 to 350 degrees F. for about 1-1/2 to 2 hours.
  5. Stir every 20 to 30 minutes, adding more water as needed, if necessary. Watch closely and stir fairly often to keep it from sticking.
