ann's corn casserole

I got a version of this recipe from a dear friend. I've tweaked it to my family's taste. By popular demand, I bring it to all family reunions!

Ingredients

  • 16 oz cans cream-style corn
  • 16 oz cans whole kernel corn, drained
  • 1/2 cup onion, chopped
  • 1/4 cup bell pepper, chopped
  • 1 small jar pimientos, diced
  • 1 cup ritz cracker crumbs
  • 1 cup milk
  • 3 - eggs
  • 1 cup cheese, shredded
  • 1 stick butter, melted

How To Make ann's corn casserole

  • Step 1
    Whisk milk and eggs together. Add in cracker crumbs. Let stand 15-20 minutes.
  • Step 2
    Saute onion and bell pepper in 2 tablespoons butter. Add to cracker mixture.
  • Step 3
    Add remaining ingredients; mix well.
  • Step 4
    Pour into 9 X 13 casserole dish. Bake at 350 deg. for about 1 hour.
