I got a version of this recipe from a dear friend. I've tweaked it to my family's taste. By popular demand, I bring it to all family reunions!

  • 16 oz can(s)
    cream-style corn
  • 16 oz can(s)
    whole kernel corn, drained
  • 1/2 c
    onion, chopped
  • 1/4 c
    bell pepper, chopped
  • 1 small
    jar pimientos, diced
  • 1 c
    ritz cracker crumbs
  • 1 c
  • 3
  • 1 c
    cheese, shredded
  • 1 stick
    butter, melted

How to Make Ann's Corn Casserole


  1. Whisk milk and eggs together. Add in cracker crumbs. Let stand 15-20 minutes.
  2. Saute onion and bell pepper in 2 tablespoons butter. Add to cracker mixture.
  3. Add remaining ingredients; mix well.
  4. Pour into 9 X 13 casserole dish. Bake at 350 deg. for about 1 hour.
