all-purpose rice casserole
To the people who love rice casserole, I created this recipe. It's based on Kinder's All-Purpose seasoning. It's great with a side of baked chicken, and there's American cheese on the bottom.

Ingredients
- 1 cup cubed processed American cheese
- 8 tablespoons all-purpose seasoning, divided
- 2 cups uncooked wild and long grain rice
- 6 cups water
- 1 tablespoon avocado oil
- 1 medium Vidalia sweet onion, peeled and chopped
- 1 medium carrot, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 tablespoon margarine
- 1 cup half and half
- 2 cans cream of mushroom soup
- 3/4 cup sour cream
- 8 ounces whipped cream cheese
- 1 cup shredded Parmesan cheese
How To Make all-purpose rice casserole

Step 1Coat a 9x13-inch baking dish with cooking spray. Add cubed American cheese and 2 tablespoons all-purpose seasoning; mix well.

Step 2Place wild and long-grain rice and water in a pot and bring to a boil. Add 2 tablespoons all purpose seasoning. Reduce the heat to low, cover, and cook for 45 minutes.

Step 3Preheat oven to 350 degrees F.

Step 4Heat avocado oil in a large, deep skillet over medium heat. Add chopped Vidalia onion, diced carrots, and minced garlic. Cook and saute for 5 minutes until vegetables are tender.

Step 5Season with ground cumin and 2 tablespoons all-purpose seasoning and stir well. Remove from heat.

Step 6Melt margarine and 1 tablespoon all-purpose seasoning in a medium saucepan over medium heat.

Step 7Combine half and half, soup, sour cream, whipped cream cheese, and remaining all-purpose seasoning; stir well and let it simmer for 5 minutes.

Step 8Add cooked rice and sauteed vegetables; mix well until combined. Remove from heat.

Step 9Spoon into a prepared baking dish and spread evenly. Sprinkle with shredded Parmesan cheese.

Step 10Bake for 35 minutes or until golden brown. Cool completely for 15 minutes.
