To the people who love rice casserole, I created this recipe. It's based on Kinder's All-Purpose seasoning. It's great with a side of baked chicken, and there's American cheese on the bottom.

Ingredients

  • 1 cup cubed processed American cheese
  • 8 tablespoons all-purpose seasoning, divided
  • 2 cups uncooked wild and long grain rice
  • 6 cups water
  • 1 tablespoon avocado oil
  • 1 medium Vidalia sweet onion, peeled and chopped
  • 1 medium carrot, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 tablespoon margarine
  • 1 cup half and half
  • 2 cans cream of mushroom soup
  • 3/4 cup sour cream
  • 8 ounces whipped cream cheese
  • 1 cup shredded Parmesan cheese

How To Make all-purpose rice casserole

  • Step 1
    Coat a 9x13-inch baking dish with cooking spray. Add cubed American cheese and 2 tablespoons all-purpose seasoning; mix well.
  • Step 2
    Place wild and long-grain rice and water in a pot and bring to a boil. Add 2 tablespoons all purpose seasoning. Reduce the heat to low, cover, and cook for 45 minutes.
  • Step 3
    Preheat oven to 350 degrees F.
  • Step 4
    Heat avocado oil in a large, deep skillet over medium heat. Add chopped Vidalia onion, diced carrots, and minced garlic. Cook and saute for 5 minutes until vegetables are tender.
  • Step 5
    Season with ground cumin and 2 tablespoons all-purpose seasoning and stir well. Remove from heat.
  • Step 6
    Melt margarine and 1 tablespoon all-purpose seasoning in a medium saucepan over medium heat.
  • Step 7
    Combine half and half, soup, sour cream, whipped cream cheese, and remaining all-purpose seasoning; stir well and let it simmer for 5 minutes.
  • Step 8
    Add cooked rice and sauteed vegetables; mix well until combined. Remove from heat.
  • Step 9
    Spoon into a prepared baking dish and spread evenly. Sprinkle with shredded Parmesan cheese.
  • Step 10
    Bake for 35 minutes or until golden brown. Cool completely for 15 minutes.
