Very easy recipe that I've been making for a long time to serve with Mexican foods, from enchiladas to tacos.

Ingredients
- 8 ounces package yellow rice mix
- 1 1/4 cups chicken or vegetable broth
- 2 tablespoons olive oil
- 15 ounces can black beans, rinsed and drained
- 16 ounces can sweet corn, drained
- 2 teaspoons fresh lime juice
- 1 teaspoon cumin
How To Make "yellow" rice

Step 1In saucepan with lid, bring rice, broth and oil to the boil.

Step 2Reduce heat and simmer for 20-25 minutes.

Step 3Meanwhile, mix together beans, corn, lime juice and cumin. Stir into rice and serve.
