wild rice & apple cider pilaf
Mom always made the best rice pilaf...this is a very different version with wild rice and apple. Enjoy!

Ingredients
- 3/4 cup wild rice
- 2 cups unsweetened appel cider
- 1/4 cup butter
- 1/2 cup sliced almonds
- 1/2 cup golden raisins
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon fresh ground black pepper
- 1/4 teaspoon nutmeg
- 1 medium apple
How To Make wild rice & apple cider pilaf

Step 1Wash rice in three changes of hot tap water, draining well at the end. Combine with cider and 1 c water in saucepan, bring to boil over high heat. Reduce and cover, simmer on low until tender but firm, 30-40 min. In large skillet, melt butter and add almonds and raisins. Cook, stirring, until almonds are light brown, about 5 min. Add salt, pepper, cinnamon and nutmeg. Stir in fresh chopped apple without peel or core, and rice. Cook until warmed through, about 1 min. Serve warm.
