I remember making this for a dinner party...good thing I raided Barb's recipes on my last visit!

  • 2 Tbsp
    butter or margarine
  • 1 1/3 c
  • 1/3 c
    diced onion
  • 1/4 tsp
    dried basil
  • 1/4 c
    diced carrot
  • 1/2 tsp
  • 1/4 c
    diced celery
  • 1/8 tsp
  • 1 1/2 c
    long grain rice
  • 10 1/2 oz
    condensed chicken broth, undiluted
  • 1/4 c
    diced red or green bell pepper

How to Make White Rice Pilaf, Barb


  1. Place butter, onion, carrot, celery and rice in 9x13. Bake at 400 degrees until butter melts. Stir gently until vegetables and rice are coated. Add remaining. Bake, covered, at 400 degrees 50 minutes or until liquid is absorbed. Press mixture into a 1/2 cup measuring cup and invert onto individual plates. If desired, garnish with red bell pepper strips or stars, or fresh parsley sprigs.
