Ingredients For venetian peas & rice

  • 1 c
    frozen peas
  • 4 Tbsp
    butter
  • 5 Tbsp
    freshly grated parmesan cheese plus more for serving
  • 2 Tbsp
    olive oil
  • 1 sm
    onion chopped
  • 3 Tbsp
    fresh parsley chopped
  • 1 c
    risotto rice
  • 7 c
    vegetable stock
  • salt and pepper to taste

How To Make venetian peas & rice

  • 1
    Put 1 tbsp of butter into a small saucepan. Saute the 1/2 cup of the peas until they are soft. Put in a food processor and add another tbsp of butter and 1 tbsp parmesan cheese. Process to a puree. Reserve the reamining peas.

    In a heavy saucepan melt 2 tbsp of butter and oil. Add the onion and cook until it starts to soften. Add the parsley and cook for another 3 minutes.Stir in the reserved peas.

    Add the rice and stir to coat them.. Add the vegetable stock and the pea puree. Simmer for about 20 minutes. Stir in the remaining butter and parmesan cheese. Garnish with more parsley if desired.
