Ingredients
- 1 stalk vigo yellow rice ( 5 ounces)
- 2 cloves diced garlic
- 1/2 cup diced onion
- 1/2 cup thinly sliced carrots
- 1 large celery stalk
- 1 cup sliced mushrooms
- 2 large handfulls chopped baby spinach
- 2 tablespoons butter
- pinch salt and pepper to taste
- 1/2 can green peas
How To Make vegiefull yellow rice

Step 1Prepare rice according to package directions except add onion, garlic, carrots, celery and mushrooms with butter and water.

Step 2When rice is cooked add spinach and peas. Cover pot and let rest. Add salt and pepper, if using.
