Ingredients
- 2 tablespoons olive oil
- 1 cup shredded carrots
- 1 cup frozen peas, thawed
- 1 cup spinach
- 3 1/2 cups cooked rice, cooled
- 2 teaspoons vegetable oil
- 2 large eggs, beaten
- 1/4 cup flour
How To Make veggie rice cups

Step 1Preheat oven to 400 degrees. Spray muffin pan with cooking spray.

Step 2Heat olive oil in skillet. Add carrots and cook until soft.

Step 3Add peas and spinach. Cook until spinach is soft.

Step 4Transfer veggies to a large bowl.

Step 5Stir in rice, vegetable oil, eggs and flour.

Step 6Spoon the mixture into the muffin tin cups.

Step 7Bake 20 - 25 minutes.

Step 8Let cool for 5 minutes before removing from pan.
