Vegetable Wild Rice Skillet

I don't know about you, but I love rice. Any kind of rice. Wild rice, though, is a nice change from white rice once in awhile. This recipe is so quick and easy. Preparation time is minimal. This is meant to be a side dish, but I have, on occasion, doubled the recipe and added leftover cooked, cubed chicken to it and I turned it into a main dish. (Or you can get a rotisserie chicken and cut some of it up and add to it.) I love versatility in a recipe and this one affords you the opportunity to do that.

  • 15 oz
    can chicken broth
  • 2 Tbsp
    butter or margarine
  • 16 oz
    package frozen cauliflower, carrots and broccoli
  • 1 box
    uncle ben's wild rice
  • 3/4 c
    shredded cheddar cheese (either white or yellow is ok)

How to Make Vegetable Wild Rice Skillet


  1. Heat broth and butter to boiling in a skillet.
  2. Stir in vegetables, rice and contents of seasoning packet that comes in the box of wild rice.
  3. Heat to boiling. Reduce heat to low.
  4. Cover and simmer for 20-25 minutes or until vegetables and rice are done.
  5. Sprinkle with cheese. Give it just a minute or two to melt and then serve.
