vegetable wild rice skillet
I don't know about you, but I love rice. Any kind of rice. Wild rice, though, is a nice change from white rice once in awhile. This recipe is so quick and easy. Preparation time is minimal. This is meant to be a side dish, but I have, on occasion, doubled the recipe and added leftover cooked, cubed chicken to it and I turned it into a main dish. (Or you can get a rotisserie chicken and cut some of it up and add to it.) I love versatility in a recipe and this one affords you the opportunity to do that.

Ingredients
- 15 ounces can chicken broth
- 2 tablespoons butter or margarine
- 16 ounces package frozen cauliflower, carrots and broccoli
- 1 box uncle ben's wild rice
- 3/4 cup shredded cheddar cheese (either white or yellow is ok)
How To Make vegetable wild rice skillet

Step 1Heat broth and butter to boiling in a skillet.

Step 2Stir in vegetables, rice and contents of seasoning packet that comes in the box of wild rice.

Step 3Heat to boiling. Reduce heat to low.

Step 4Cover and simmer for 20-25 minutes or until vegetables and rice are done.

Step 5Sprinkle with cheese. Give it just a minute or two to melt and then serve.
