vegan fried "rice"
We love pairing farro, a nutty grain that is delish when toasted (and can be found in almost any bulk section) with the bold flavors of Chinese five spice powder, with freshly ground fennel, cinnamon, Szechuan peppercorns & cloves for an easy vegan fried rice dish. Add in scallions and garlic, and this is a hugely flavorful meal. Sub in brown rice or any fresh veggies you have on hand for an easy weeknight meal in under 20 minutes. Enjoy!

Ingredients For vegan fried "rice"

2 cfarro or brown rice, cooked

2 Tbspcanola oil

1package mushrooms, diced

1stalk broccoli or 2 cups pea shoots, diced

3carrots, diced
-
1inch ginger, minced

2 Tbspsoy sauce
-
1 Tbsprice vinegar
-
rawspicebar's chinese five spice
-
2cloves garlic, minced
-
2fried eggs
-
scallions, toasted almonds, chili sauce to top, optional
How To Make vegan fried "rice"

1Heat a skillet or wok over medium high heat in oil. Once hot, add garlic, mushrooms and carrots and saute, 4-5 minutes until wilted. Add broccoli or pea shoots and let cook, another 3-4 minutes.

2Add another ⅓ of the oil to the pan, add the cooked farro, and fry for 4-5 minutes to get it crispy and hot. Once crispy, fold in the veggies, five spice powder and soy sauce and cook until fragrant, 1-2 minutes. Remove from heat and divide into dishes.

3Heat skillet once more with oil. Crack eggs to fry and cook through. Serve on top of rice with toasted almonds scallions & chili sauce, as desired. Enjoy!
