This recipe uses just the juice from the cans of fruit. In order not to waste, you can make a delicious fruit dessert just by tossing the drained fruit with cool whip, flaked coconut, and sliced bananas.

Ingredients
- 1 can (8 oz) pineapple chunks
- 1 can (8 oz) mandarin oranges
- 1 teaspoon fresh ginger, grated
- 1 cup chicken broth
- 1 cup jasmine rice
- 2 tablespoons slivered toasted almonds, optional
How To Make tropical rice

Step 1Strain pineapple and mandarin juices, reserving 1 cup and discarding the rest. Pour the juice into a medium saucepan. Add the chicken broth and ginger.

Step 2Bring juice to a boil, then add the rice. Cover and reduce heat to low. Simmer 15-20 minutes until rice is tender. Fluff. Add the slivered almonds, if using.

Step 3Note: Use the pineapple and oranges for a nice fruit salad or a tropical drink.
