Ingredients
- 1 tablespoon fresh ginger, minced
- 2 tablespoons vegetable oil
- 1 1/2 cups long-grain rice, uncooked
- 2 1/4 cups chicken broth
- 1/4 cup coconut milk
- 1/4 cup raisins
- 2 tablespoons light soy sauce or tamari
- 1 tablespoon fresh lime juice
- 1 tablespoon curry powder
- 1/2 teaspoon chinese chili sauce
- 1/2 teaspoon salt
- 1/2 teaspoon lime rind
- 1/2 cup green onions, chopped finely
- 1/2 cup fresh pineapple, diced
- 1/3 cup toasted slivered almonds
- 2 tablespoons fresh lime juice
How To Make tasty thai-style fried rice

Step 1In a large skillet, saute ginger in oil until tender.

Step 2Add rice to the skillet, stirring well to coat - approx. 5 minutes. Add broth; then add coconut milk through grated lime zest.

Step 3Bring rice to a boil; then reduce heat and simmer (covered) about 20 minutes until rice is tender and liquid has been absorbed.

Step 4Once done, add green onions, pineapple, almonds and lime juice.
