Not too spicy, just a little heat. This is an easy dinner idea that you can vary by using one cup salsa for part of the water, adding chopped leftover chicken, other veggies, cheese soup, or even doubled.

Ingredients

  • 1 c
    jasmine rice
  • 2 c
    water
  • 1 Tbsp
    butter or margarine
  • 1/2 tsp
    chicken bouillon
  • 1 tsp
    onion powder
  • 1
    bell pepper, sliced into 1/4 inch strips (or a couple handfuls frozen pepper strips)
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    chopped green chiles

How to Make Spicy Chicken Rice

Step-by-Step

  1. Spray large bowl w/ cooking spray. Put rice, 2 cups water, tbsp. butter or margarine, seasonings and pepper strips in bowl and stir to mix.
  2. Microwave on high for 5 minutes. Stir and cook at medium for 15 minutes.
  3. Take out, stir and add cream of chicken soup and green chiles. Mix well. Serve.
